Are you someone who lives by your Instant Pot or pressure cooker? I will freely admit, there is rarely a week that goes by that I am not cooking something in my pressure cooker. To me, it is great being able to make so many dishes in a fraction of the time it would take normally, especially if they were dishes I used to make in my slow cooker. One of the things I have especially loved is that one of my favorite international cuisines – Indian – has been moving more toward pressure cookers. When I was asked to review The Complete Indian Instant Pot Cookbook: 130 Traditional and Modern Recipes by Chandra Ram, I honestly couldn’t wait for to arrive!
The Complete Indian Instant Pot Cookbook: What Is It?
Looking for a way to cook authentic Indian dishes at home without spending all day in the kitchen? If so, we think you will love The Complete Indian Instant Pot Cookbook: 130 Traditional and Modern Recipes by Chandra Ram. Here is what the publisher has to say about this new cookbook:
The Instant Pot® is a game-changer for Indian cooking because it replaces a pressure cooker, slow cooker, yogurt maker, rice cooker, bread proofer and steamer all in one. Gone are the days when preparing Indian food just seemed too intimidating or for weekends only. Dried lentils and chickpeas cook in a flash, even when they haven’t been soaked overnight. Rice is perfectly done in ten minutes and homemade yogurt can be made to a particular tanginess and texture. Even braised meats that usually take a full day can be ready in less than an hour.
In The Complete Indian Instant Pot® Cookbook, award-winning editor and author Chandra Ram shares 130 recipes from all over India, specifically designed for the Instant Pot®, that meld Indian ingredients and American sensibilities for novices and experts alike. Recipes range from traditional to modern and go beyond the greatest hits that you see in Indian restaurants. You’ll find tons of familiar favorites, including Butter Chicken and Chana Masala; less well-known regional dishes like dosas, biryanis and dals or lentil stews; and contemporary twists on Indian flavors such as Orange Cumin Salmon and Chocolate Chai Pudding.
Chandra takes you through cooking all the parts of an Indian meal: ghee, yogurt and cheese; pickles and chutneys; snacks and chaats; soups; vegetables; porridge and rice; biryanis; lentils, chickpeas and pulses; meat and seafood; breads, pancakes and crepes; and desserts. She also offers meal plans, easy substitutions and tips for building an Indian pantry. Cooking Indian food has never been as approachable, fast and easy!

The Complete Indian Instant Pot Cookbook: Our Thoughts
From the moment I opened this cookbook, I have to admit, I was stunned and awed not just by the recipes, but the beautiful images. It is rare anymore to find a cookbook with beautiful images. This cookbook doesn’t just have images of nearly every recipes, but wows with them. I mean, in my experience, Indian rarely looks good, no matter how heavenly they taste, and the author found a way to make even dishes that I have seen in restaurants look…interesting…seem stunning. I was especially excited about their Saag Paneer recipe, which looks so easy to make and delicious. Along with the delicious recipes, the author also spends quite a bit of time educating, taking the guess work out of new dishes and explaining them, making it more fun to experiment at home. After going through The Complete Indian Instant Pot Cookbook: 130 Traditional and Modern Recipes, I can honestly say I can’t wait to start making more Indian at home from scratch.
