Lemon Berry Cobbler Recipe

A delicious summer, this lemon berry cobbler recipe features fresh blackberries and raspberries – a fantastic sweet treat!

Ingredients

1 cup fresh blackberries

1 cup fresh raspberries

2 cups all-purpose flour

4 teaspoons baking powder

1/4 teaspoon salt

1 tablespoon lemon zest

1/4 cup fresh-squeezed lemon juice

1/2 cup unsalted butter, melted and cooled

1 cup milk

1 3/4 cups granulated sugar, divided

1 cup water

Instructions

 

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Grease a 9×13-inch baking pan. Set aside.
  3. Add the flour, baking powder, salt, 1 cup of sugar, and lemon zest to a large mixing bowl and whisk to combine.
  4. Add the melted butter, lemon juice, and milk to the bowl and mix well until smooth.
  5. Pour the batter into the prepared baking pan and spread it out evenly using a rubber spatula.
  6. Drop the berries evenly onto the top of the batter.
  7. Sprinkle the remaining ¾ cup of sugar evenly over the entire cobbler.
  8. Pour the water slowly over the entire cobbler.
  9. Bake the cobbler in the preheated oven for 45 minutes or until golden brown.
  10. Serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream on top.
  11. Store leftovers covered in the refrigerator for 3-4 days.
