Lemon Berry Cobbler Recipe
A delicious summer, this lemon berry cobbler recipe features fresh blackberries and raspberries – a fantastic sweet treat!
Ingredients
1 cup fresh blackberries
1 cup fresh raspberries
2 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon lemon zest
1/4 cup fresh-squeezed lemon juice
1/2 cup unsalted butter, melted and cooled
1 cup milk
1 3/4 cups granulated sugar, divided
1 cup water
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- Grease a 9×13-inch baking pan. Set aside.
- Add the flour, baking powder, salt, 1 cup of sugar, and lemon zest to a large mixing bowl and whisk to combine.
- Add the melted butter, lemon juice, and milk to the bowl and mix well until smooth.
- Pour the batter into the prepared baking pan and spread it out evenly using a rubber spatula.
- Drop the berries evenly onto the top of the batter.
- Sprinkle the remaining ¾ cup of sugar evenly over the entire cobbler.
- Pour the water slowly over the entire cobbler.
- Bake the cobbler in the preheated oven for 45 minutes or until golden brown.
- Serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream on top.
- Store leftovers covered in the refrigerator for 3-4 days.
