Fluffy Chocolate Chip Pancakes Recipe

A delicious, super fluffy chocolate chip pancakes recipe filled with delicious whipped cream for a delightful weekend treat.

Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup vanilla coffee creamer (one made with REAL cream, such as Natural Bliss)

1/4 cup olive oil, plus extra for cooking

2 eggs

1 1/4 cup mini semi-sweet chocolate chips, divided, plus extra for topping

1 tablespoon coconut oil

Maple syrup for serving

Whipped cream for serving

Instructions

  1. Add the flour, salt, and baking powder to a large mixing bowl and whisk to combine.
  2. Add the creamer, oil, and eggs to the mixing bowl and mix until fully combined and the batter is smooth.
  3. Add ½ cup mini chocolate chips to the mixing bowl and mix until just combined.
  4. Drizzle a skillet with a few tablespoons of oil and heat it on the stovetop over medium heat.
  5. Spoon ¼ cup portions of pancake batter onto the preheated skillet and cook for about 2-3 minutes or until golden brown. Flip the pancakes and cook on the opposite sides for 2-3 minutes or until golden brown and the pancakes are fully cooked through.
  6. Transfer the pancakes to a wire cooling rack, and repeat step 5 until all the batter is used up. Reduce the heat while cooking if necessary to prevent the pancakes from burning, as they are thick and take longer to cook through.
  7. Add the coconut oil and the remaining ¾ cup chocolate chips to a microwave-safe bowl. Microwave in 30-second intervals until the chocolate is fully melted, stirring well after each interval.
  8. Serve a stack of pancakes layered with whipped cream, drizzled with the melted chocolate, and topped with extra whipped cream and chocolate chips. You may also add a drizzle of maple syrup if desired.
