Are you someone who loves brownie batter? In our household, brownies are something everyone looks forward to eating. Since I make them from scratch, they take a bit more work, and due to the mess, I usually make them as a rare treat. Probably the most important reason is that eating an entire batch of brownies is tough for just the two of us. It is a very different story when we have guests, but neither needs it while trying to lose weight. That said, it doesn’t mean I don’t make it when I know we have guests, even if there will be leftover brownies.
I have been left with leftover treats with so much baking happening, especially with so many guests over the past couple of months. Even though I didn’t get to make the brownies, that didn’t mean I didn’t make it for ourselves. The last thing I wanted was for all the ingredients I purchased to go to waste, especially as I have been cleaning the fridge and pantry in preparation for autumn.
Now that I have all of these brownies, the next part is finding something to do with all of these yummy brownie pieces. One of the best ideas is making yummy brownie batter ice cream! After trying something similar at one of the local ice cream shops, I knew I had to try it myself. Best of all, I knew some of the children in the family would absolutely love it if I could figure out one of their favorite desserts!
I will admit, though, that this is one of the few times I have cheated a bit by using a brownie mix. I love the chewy, fudgy brownie mixes sometimes sold in bulk from Sam’s Club. This brownie batter is not just tasty but a piece of my childhood since it was how my mom always made brownies. When it comes to yummy ice cream, though, that you make without much effort, I think this no-churn ice cream is the best! Don’t be surprised if the brownie batter, no-churn ice cream, doesn’t last!
To be more in the holiday spirit, this brownie batter ice cream is also perfect for adding holiday sprinkles. I love using holiday sprinkles to brighten up traditional recipes, especially since they are relatively inexpensive and kids love them. PrintBrownie BATter No-Churn Ice Cream Recipe
A delicious and creamy brownie batter ie cream recipe that doesn’t require an ice cream machine.

Ingredients
2 cups heavy whipping cream
14 oz. can sweetened condensed milk
1 cup heat treated dry brownie mix (see notes)
1/4 cup Halloween sprinkles, plus extra for topping
1 cup brownie pieces, plus extra for topping
Instructions
- Add the heavy cream to a large mixing bowl and beat on high speed with an electric mixer for about two minutes, or until stiff peaks form when the beater is lifted.
- Add the cooled, heat-treated brownie mix and sweetened condensed milk to the mixing bowl and beat for a few more seconds until fully combined and smooth.
- Add the brownie pieces and sprinkles and mix gently with a rubber spatula until combined.
- Pour the ice cream into an 8×4 metal loaf pan and top with extra brownie pieces and sprinkles.
- Place the ice cream in the freezer for a minimum of four hours for soft ice cream, or overnight for hard, scoopable ice cream.
- Serve in a waffle cone or bowl and top with extra sprinkles and brownie pieces.
Notes
- To heat treat the brownie mix, spead the mix out evenly on a baking sheet lined with parchment paper and bake at 350 degrees Faherenheit for 5 minutes. Allow the mix to cool before adding to the ice cream.
