Are you someone who loves anything apple chai? When it comes to fall and winter flavors, this one is likely my weakness. I have to try any product with this flavor combination, and while I am mostly disappointed, it gives me an idea of how to make something similar at home. One of the things I especially like during the winter is pancakes. There is something magical about eating pancakes while watching the snow fall outside. I mean, who wouldn’t like the idea of a yummy meal during the cold seasons, especially if you don’t have to go out and deal with the snow?
I have also never liked boxed pancakes, so I spend quite a bit of time experimenting with recipes until I find the right flavor combination. This is precisely what I did when I decided to try making apple chai pancakes. I found that these pancakes weren’t just easy to make but very light and fluffy. Best of all, they are the perfect mix of apple spice with chai flavoring, making it the perfect experience for any apple chai lover.
The trick is to make a very strong chai tea. While you can use chai tea extract, I usually prefer to make my own chai tea with loose-leaf tea. If you are using tea bags, I recommend making 3 to 4 tea bags for the half cup to ensure you have the right chai flavor. While I would not drink this straight, it makes sure it isn’t diluted by the other ingredients in the recipe. It is also important that you use fresh apples. Dried apples do not work well in this recipe and become mushy during cooking. It is also alright to use 2 medium apples or 1 large apple if you want more of an apple flavor for these apple chai pancakes.
Of course, these pancakes also go great with a good cup of coffee. I typically have them with Twisted River Wild Blueberry Coffee (my favorite local coffee roaster). The blueberry-apple chai combination is genuinely out of this world, giving you the most fantastic breakfast experience. These pancakes would likely also go well with a fresh cup of tea, but I have to admit, I have never tried it. I am just too addicted to my coffee in the morning.

These delicious Apple Chai Vanilla pancakes are the perfect mix of apple spice and delicious fresh apples

Ingredients
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup light brown sugar, packed
1/2 teaspoon cinnamon
1/2 teaspoon allspice
2 eggs
1/4 cup (4 tablespoons) melted butter
1 teaspoon vanilla extract
1/2 cup strong brewed chai tea
3/4 cup Milk
1 medium apple, diced
Instructions
- Add the flour, baking powder, brown sugar, cinnamon, and allspice to a large mixing bowl and whisk to combine.
- Add the chai tea, eggs, melted butter, Bolthouse Farms drink, and vanilla extract to the mixing bowl and beat with a wire whisk until smooth.
- Add the diced apple to the batter and stir to combine.
- Spray a large skillet with non-stick cooking spray and preheat the skillet on the stovetop over medium heat.
- Drop ¼ cup portions of batter onto the preheated skillet and allow them to cook for about two minutes or until golden brown. Flip the pancakes and cook for an additional 1-2 minutes.
- Serve warm, topped with maple syrup and whipped cream.
