Are you someone who loves chocolate chip pancakes? For many of us, nothing is more relaxing than sitting with family and having a fun breakfast. For many, that includes a big breakfast of sausage, eggs, biscuits, and, of course, one of my favorites, pancakes. Growing up, my mom used to get out the Bisquick and make most of the recipes on the box at least one weekend a month. As an 80s/90s kid, I felt this was normal for most families, especially if there was a company. What family didn’t pretty much live off of Bisquick for something ‘homemade’?
As an adult, though, I prefer staying away from most mixes. Let me be the first to tell you there is nothing wrong with box mixes. They have their place, but with allergies in my family and having to watch salt due to our migraines, I have to be very careful regarding ingredients. If you prefer making your chocolate chip pancakes from a box, please don’t take this as any judgment. For those who like or need to control the ingredients in their food, though, I have to say I love being able to make pancakes from scratch, especially since they are a fairly quick breakfast food for the family.
So, what makes these chocolate chip pancakes so amazing? For us, it isn’t just the fact that they are very easy to make, but the fantastic flavor. The pancakes are rich and fluffy, making them the sort of experience everyone, regardless of age, will enjoy. We also love filling the layers of pancakes with yummy, all-natural whipped cream, breaking up some sweetness with something creamy yet delightful. Best of all, all the ingredients are things you likely already have in your pantry and fridge, making them a great, last-minute meal. The only thing I do suggest is that you make sure to use quality ingredients (I buy Ghirardelli chocolate chips in bulk).

A delicious, super fluffy chocolate chip pancakes recipe filled with delicious whipped cream for a delightful weekend treat.

Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup vanilla coffee creamer (one made with REAL cream, such as Natural Bliss)
1/4 cup olive oil, plus extra for cooking
2 eggs
1 1/4 cup mini semi-sweet chocolate chips, divided, plus extra for topping
1 tablespoon coconut oil
Maple syrup for serving
Whipped cream for serving
Instructions
- Add the flour, salt, and baking powder to a large mixing bowl and whisk to combine.
- Add the creamer, oil, and eggs to the mixing bowl and mix until fully combined and the batter is smooth.
- Add ½ cup mini chocolate chips to the mixing bowl and mix until just combined.
- Drizzle a skillet with a few tablespoons of oil and heat it on the stovetop over medium heat.
- Spoon ¼ cup portions of pancake batter onto the preheated skillet and cook for about 2-3 minutes or until golden brown. Flip the pancakes and cook on the opposite sides for 2-3 minutes or until golden brown and the pancakes are fully cooked through.
- Transfer the pancakes to a wire cooling rack, and repeat step 5 until all the batter is used up. Reduce the heat while cooking if necessary to prevent the pancakes from burning, as they are thick and take longer to cook through.
- Add the coconut oil and the remaining ¾ cup chocolate chips to a microwave-safe bowl. Microwave in 30-second intervals until the chocolate is fully melted, stirring well after each interval.
- Serve a stack of pancakes layered with whipped cream, drizzled with the melted chocolate, and topped with extra whipped cream and chocolate chips. You may also add a drizzle of maple syrup if desired.
