One thing is certain: anyone who loves chocolate will fall in love with these pancakes!
While I have made chocolate pancakes for years, they never tasted like what I found at IHOP or another restaurant that served hot cocoa pancakes (or s’more pancakes). After a bit of experimenting and with the help of some taste testers (family), I finally came up with the perfect recipe! This delicious pancake recipe has the perfect flavor and texture, using ingredients you likely already have in your cabinet. To my surprise, using a hot cocoa mix makes a difference compared to traditional cocoa. This surprised me as someone who typically uses chocolate Ovaltine or makes their cocoa using traditional baking cocoa. Who knew that the restaurants use the hot cocoa mix to make their pancakes?
This was an excuse to get the hot cocoa I drank as a child. Who doesn’t want to wake up to warm hot cocoa pancakes, especially with melted marshmallows? What I love even more is that they are very fast to make. Depending on whether I double the recipe for guests, I could make an entire recipe batch in 10 to 15 minutes. Children will especially love this delightful recipe, which is great for a cold winter morning or holidays. Just ensure you use quality ingredients since they make a difference in these hot cocoa pancakes’ flavor.

Delicious and fluffy hot cocoa pancakes with marshmallows and chocolate syrup

Ingredients
1 1/2 cups all-purpose flour
1/2 cup milk chocolate hot cocoa mix
1/2 tablespoon baking powder
1 1/4 cup milk
1/4 cup healthy oil, such as olive oil
2 large eggs
1/2 cup mini semi-sweet chocolate chips, plus extra for topping
Chocolate syrup for drizzling
Whipped cream for topping
Mini marshmallows for topping
Instructions
- Add the flour, hot cocoa mix, and baking powder to a large mixing bowl and whisk to combine.
- Add the milk, eggs, and oil to the mixing bowl and beat with a wire whisk until smooth.
- Add the chocolate chips to the batter and stir to combine.
- Spray a large skillet with non-stick cooking spray and preheat the skillet on the stovetop over medium heat.
- Drop ¼ – ½ cup portions of batter onto the preheated skillet and allow them to cook for about two minutes or until golden brown. Flip the pancakes and cook for an additional 1-2 minutes.
- Serve warm, topped with chocolate syrup, whipped cream, mini marshmallows, and additional chocolate chips.
