Are you someone who loves margaritas? Honestly, they are one of the few alcoholic drinks I enjoy (I’ve even had a virgin one before and liked it). To me, that mix of sweet and tart is one of those things that just screams summer to me. While I love the flavor of this drink though, I rarely enjoy actually drinking alcohol, making enjoying a margarita something rare. At least, that was until one of my friends introduced me to the most delicious margarita cupcake recipe.
Unlike a real margarita, these margarita cupcakes have very little alcohol, with the majority of it baking out of the cupcake. In other words, you get the flavor in a yummy cupcake that even people under the age of 21 can appreciate. Best of all, they are delicious and easy to make, allowing you to make a fun cupcake that can easily impress everyone you are entertaining, especially at bridal showers! Ingredients
For the Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup butter, at room temperature
- 1 cup white sugar
- 2 eggs, at room temperature
- 1 1/2 limes, zest and juice
- 2 tablespoons tequila
- 1/4 teaspoon vanilla extract
- 1/2 cup whole milk
- 1 to 2 tablespoons tequila (brushing the cupcakes)
Tequila-Lime Frosting
- 1 cup unsalted butter, at room temperature
- 2 3/4 cups powdered sugar
- 1 tablespoon lime juice
- Pinch of coarse salt
Instructions

- Preheat the oven to 325 degrees F.
- While you are waiting, grease or line your cupcake pan.
- In a medium bowl, whisk together the flour, baking powder and salt
- Using your stand mixer on medium speed, beat the butter and sugar together for 5 minutes
- Add eggs one at a time to the mixture
- Scrape the sides of the bowl and add the lime zest, lime juice, vanilla extract and tequila. Mix well.
- Reduce your mixer to low speed and start adding the dry ingredients slowly, along with the milk.
- Bake for 25 minutes or until cupcakes are slightly golden. Cool for 5 – 10 minutes.
- Brush the tops of the cupcakes with the 1 to 2 tablespoons of tequila. Allow to completely cool before icing.
Frosting Directions
- Cream the butter and sugar in your stand mixer on medium high speed for about 5 minutes.
- Add the lime juice, tequila and salt mix on medium-high speed until fluffy. If the frosting appears a bit too soft, add some additional sugar, one spoonful at a time until desired consistency is reached.
- Frost cupcakes and garnish, if desired, with lime zest, an additional sprinkling of salt and a lime wedge.
